Well, if anyone is looking for an AWESOME recipe for some dressing for Thanksgiving, or really any time, here’s the recipe for the kind my Amish grandma makes. Its my absolute favorite! Enjoy! (this does take lots of prep so get your hubby or kids to help!!)
Mom Yoder’s Amish Dressing – Family Favorite
18 Slices of bread, cubed and toasted in skillet*
At least 2 cups diced potatoes
1 cup finely diced cooked carrots
3 cups diced cooked celery
2-3 cups diced cooked chicken
celery salt, salt, and pepper to taste
1-2 cups chicken broth
5 well-beaten eggs
In large mixing bowl (VERY Large!), put bread cubes, potatoes, carrots, celery & seasonings. Add enough chicken broth to make bread cube mixture sticky. Add beaten eggs. Add diced, cooked chicken and toss lightly. Cook the dressing in a well-buttered skillet, turning often until light brown. May also be baked in a 350 degree oven. The chicken and potatoes may be increased in quantity if desired.
*side note…for ease and time, I’ve used 1 bag of the store-bought stuffing, but it has to be the soft bread cube kind. I got mine at Publix, and its called “Martins Famous Dutch Taste PotatoBread Soft Cube Stuffing”.
