Pumpkin Cookies

Just had to post this. Got this recipe from my friend Stacey, and I just made them. They’re AWESOME! Try them out 🙂

Pumpkin Drop Cookies – Stacey Gall
1 cup sugar
1 cup butter
1 cup canned pumpkin
1 egg
1 t. vanilla
2 cups flour
1t. baking powder
1t. baking soda
1/2 t. salt
1t. cinnamon
1/2 t. nutmeg

2 cups confectioner’s sugar
3 T. milk
1 t. vanilla
1 T. butter, melted

In a large bowl, cream butter and sugar. Add in pumpkin, vanilla, and egg. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the flour mixture to the pumpkin mixture. Drop by spoonfuls onto cookie sheet. Bake at 350 for 15 minutes.

For Glaze: Melt butter and add sugar, milk, and vanilla to it. Use a fork to drizzle it over cooled cookies.

*You could ice these with Betty Crocker’s cream cheese frosting instead…but I have the stuff for the glaze to make in my pantry already…no added expense!!
